Ingredients: | 1 lb of sirloin steak, sliced
1/4 lb mushrooms, thinly sliced or small cubed 1/2 cup dry red wine (perhaps more for marinade, but only 1/2C when cooking) 1.5 TBSP very good olive oil small handful leaf parsley, chopped 1/4 tsp tarragon 1/4 tsp salt 1/8 tsp marjoram 1.5 TBSP flour 3 TBSP blue cheese |

Preparation: | Marinate steak and mushrooms for a least one hour. Use enough wine to
cover ingredients. Drain liquid, reserving 1/2 C Heat pan with olive oil Slightly cook parsley, tarragon, salt and marjoram to flavor oil Add meat and mushrooms and cook until no longer red Sprinkle ingredients with flour to coat. Add wine and cook until thickened. Add blue cheese, blend, and remove to serving dish. |
