Ingredients:1 ripe but firm avocado, diced
1 firm fuyu persimmon*, diced
1/4 sweet onion, chopped finely
1 handful cilantro, chopped finely
juice of one small lemon
juice of one small lime
generous gurgles of Tequila**
salt as desired (or not)
Preparation:Combine everything but the persimmon and allow to sit for 130 miles.
Dice and add persimmon. (I couldn't find a fuyu* persimmon until I
was on the way out of town.) Bribe judge retroactively with a large
bag of cilantro and diced sweet onion, left over from over-enthusiastic
chopping.
Notes:*These are the short firm ones that look like orange tomatoes, NOT the
long acorn-shaped ones. The latter have to be soft before they are
edible.)

** The Tequila is to amuse me, as virtually no one entered the year I
was Tequila judge. I'm still bitterly disappointed and have decided
to challenge myself to include Tequila in my entries until something
else amuses me more.
