Ingredients: | 2 cups milk
1/2 can of corn 1 Cup sweet corn off the cob ( I cooked fresh Sweet corn and froze in a Ziploc bag last September ) 1 Medium Russet potato 19-12 small baby carrots 1 celery stalk with the leafy bits 1/2 onion 1/4 cup minced flat leaf parsley 1 tsp. salt (to taste) 1 1/2 strips of bacon 2 tbsp butter |

Preparation: | put milk in soup 2 qt soup pot
add canned corn Chop celery leafy bits and minced parsley add to pot add 1/2 of the butter to the pot fry bacon and until crisp peel and dice potato - add to pot split carrots and chop when crisp remove bacon and drain add carrots to rendered bacon fat for 5 minutes mince bacon and add to pot dice onion and celery add carrots to pot cook onion and celery in remaining bacon fat until softand add to pot add 1 tbsp of corn starch that was mixed with cold water as a thickener, bring to a soft boil and simmer check for taste after 45 minutes add more salt & pepper to taste |
