Ingredients: | 1 Tbsp butter
1 8oz package chopped mushrooms 1 oz chopped portabello mushroom 1/4 cup crumbled blue cheese 2 Tbsp dry sherry |

Preparation: | In a large frying pan melt butter over high heat.
Add mushrooms. Cook, stirring often, 4 minutes or until mushrooms begin to brown and liquid is gone. Sprinkle with blue cheese, stir in sherry. Continue cooking until cheese is melted. We cook and serve in a cazuela. Serve with bread or crackers. |

Notes: | Above it the "actual" recipe. Which we haven't used in about 7 years.
We use whatever mushrooms look good. We have subbed in all different kinds of cheeses depending on mood and availability. Gorgonzola works well. And we usually add garlic. And until I read the recipe, I never realized it called for butter. I have always used olive oil. |
