Ingredients: | 1C + 2 T flour (7 C) plus some for tossing
1 t powdered cumin (1 T) 1 t coarse salt (2 T) 1/8 t chipotle powder (1 t) 1/2 t black pepper (1 T) 3/4 C buttermilk (1 qt) 3/4 C beer or cider (3 bottles (2 cider, 1 beer)) 1 egg (6) 2 sweet onions (fry 'em 'til you run out of onions or eaters) oil for frying |

Preparation: | Slice sweet onions 3/4" thick (1/2" for ordinary onions)
Combine dry ingredients well. Beat egg, combine with rest of wet ingredients Stir wet ingredients into dry ingredients Toss onions in flour, shake lightly, dip into batter, fry at 370 until brown |

Notes: | I prefer these with cider+beer. You may prefer all beer.
Don't use a dark beer. It tastes fine, but it's impossible to tell when the batter is sufficiently browned. The () are 6x for large crowds. |
