Ingredients: | Bow tie pasta (or rotini, or regular egg noodles), cooked & kept warm
Olive oil (good, fragrant stuff) 2 shallots, chopped 4 cloves garlic chopped 2 leeks (or 6 teeny ones), cleaned & chopped 2 carrots, shredded 1/2 c dry sherry 1 c half & half 2 c kale, finely cut. (Mine is pretty "baby") the leftover salmon from below (about 1-1/2 cups) 1/2 c grated romano |

Preparation: | Saute shallots till carmelized and mostly brown. Add garlic and saute
quickly till fragrant. Add leeks and saute till they look blanched and begin to soften. Add carrots. Continue to saute till you can smell the carrots. Add the sherry, and cook away till almost dry. Turn heat down and add the half and half. Heat and stir till warmed. Add the kale, and heat till kale is limp but still has a bit of chew to it. Add the salmon, tossing gently to coat, but not to break it up much. Finally, add the romano, and stir gently till incorporated mostly. Adjust seasonings and dump over pasta, stirring so it's all nicely coated. Pig out. Wish for more leftovers. |
