Ingredients: | 1 - 9" unbaked pie shell
1 c sugar 3 Tbsp flour dash of salt 1 c sour cream 1 tsp cinnamon 2 Tbsp sugar 3 c tart apples, sliced |

Preparation: | Arrange apple slices (or other fruit) in pie shell.
Combine sugar, flour & salt. Add sour cream and beat until smooth. Pour mixture over fruit in pastry shell. Sprinkle cinnamon & sugar over filling. Bake at 425 for 15 minutes. Reduce heat to 350 for a further 35 minutes or until apples are tender and topping has browned. |

Notes: | Variations:
Sliced peaches Pitted fresh cherries Mixed fruit (plums, cherries, peaches) Sliced pears Lower fat - drained thickened plain yogurt - gives a slightly tarter taste. Sugar can also be reduced or replaced with brown sugar. I like to add a little nutmeg. |
