Ingredients: | 3 to 4 lb beef clod [whatever that is] or bottom round
4 tsp salt 2 c water 2 c vinegar 2 medium onions, sliced 3 bay leaves 1 tsp peppercorns 12 cloves 1/4 c brown sugar 12 gingersnaps 2 c sour cream or thick yoghurt |

Preparation: | Bring vinegar, water and sugar to a boil, stirring to dissolve sugar. Pour over the meat, onion and spices.
Marinate for 3 to 7 days. Simmer for three hours in strained marinade plus gingersnaps. Take the meat out, slice, and keep warm while you make MIX dumplings. Remove dumplings to a serving plate, stir sour cream or yoghurt into the marinade, and serve forth. |
